A Slimmer Mac 'n' Cheese for keto diet!
Eating high carbs and high fats food is unarguably a fast track to weight-gain! Ironically, all comfort foods are usually in this combination. Originated from England and probably made popular by the Americans, Mac n Cheese is one of those guilt food.

Good news is now there is a way to trim down the carbs by simply substituting the macaroni with konjac oat fiber. Oh yaaas!! It's definitely a good news to all kids... and adults who love mac 'n' cheese.
Instead of oven-baked, this Mac and Cheese is made on the stovetop and it's ready in 10 minutes. Another bonus is, you only need 4 ingredients to cook this recipe. My son really loves this keto mac n cheese and has been repeatedly asking me to make for him. Because it is so easy to made and so delicious, I did a step-by-step video to make it possible for all to give this recipe a go.


Ingredients:
konjac oat fiber 1 packet (I use Moki which is 200g/pack)
butter 1tbs
whipping cream 40-50ml
cheddar cheese 40-50g (grated)
Himalayan salt 1/2-1ts
black pepper 1/4ts
cheddar cheese 40-50g
Method:
Rinse the macaroni 2-3 times with water to get rid of the fishy smell. Drain and set aside.
Add butter to a skillet on low to medium heat.
Add whipping cream, salt and pepper and stir to blend well.
When the mixture just reaches a simmer, add in cheddar and macaroni.
Turn up the heat to medium and stirring constantly to avoid the cheese from sticking to the skillet and over-burned.
When the macaroni is soften and the mixture is reducing, turn down the heat to low-medium to avoid the fats from breaking.
Continue to stir until the cream sauce is thicken and well-combined with the macaroni.
Top with some ground pepper, paprika or bacon chips if you like.
