Recipe for Keto Creamy Broccoli Soup
A few days ago when broccoli soup was served, my just turned teenage son asked for toast. So again I made Creamy Broccoli Soup with Full Fat Greek yoghurt, bacon and a coconut bread loaf. Haha... it's really easy to feed him 😁
Recipe for Keto-compliant Creamy Broccoli Soup
💡Ingredients: 1 head Australian broccoli approx. 600-700g 2 cup bone broth or chicken stock 1tbs butter 1 cup heavy cream 1/2cup cheddar cheese (grated) 2 cloves garlic 1/2 ts pink salt 2 rashers bacon 2 tbs full fat Greek yoghurt Black pepper
💡 Method: 1) Wash and dice broccoli. 2) On low heat, add butter to a pot. 3) When the butter is almost fully melted, add in broccoli and stir. 4) Pour in the broth/stock when broccoli is soften. 5) Turn the heat to medium and bring to a simmer. 6) Add heavy cream, cheddar and salt. 7) Stir to avoid burning at the bottom of the pot. 8) When the cheese is well incorporated, turn off the heat. 9) Now use a handheld blender to blend the soup until the broccoli is well blended. 10) Top with black pepper, yoghurt and bacon.
